Ingredients

  • 130 g powdered sugar
  • 120 g almond flour
  • 105 g egg whites (about 3)
  • 100 g granulated sugar
  • 1 teaspoon vanilla bean paste
  • 10 drops red food gel
  • 10 drops blue food gel
  • 113 g heavy cream (cold)
  • 113 g mascarpone (cold)
  • 50 g granulated sugar

Instructions

  1. Preheat the oven to 150°C (300°F) and line baking sheets with parchment paper.
  2. Sift together powdered sugar and almond flour in a bowl.
  3. In a stand mixer, whip egg whites until foamy; gradually add granulated sugar until stiff peaks form.
  4. Fold in vanilla bean paste and red food gel; divide mixture in half and add blue food gel to one half.
  5. Pipe small circles onto baking sheets; let rest for 30 minutes until a skin forms.
  6. Bake for about 12 minutes; cool completely before filling.
  7. Whip heavy cream until soft peaks form, then mix in mascarpone and sugar until stiff peaks form.
  8. Assemble by piping frosting between macaron shells.
