About

Hi, I’m Aimee!

Welcome to My Fast Recipe. I’m a home cook and avid baker based in Denver, Colorado, where busy workdays and chilly mountain evenings mean dinner needs to be warm, filling, and on the table without taking over the whole night. I created this site to share practical comfort food, hearty soups, and quick homemade treats built for real schedules and regular grocery store carts.

Learning to Cook Against the Clock

My education in fast home cooking came from my older sister, Nora. She is eight years older than me, and growing up, she ran our kitchen on weeknights while both of our parents worked late hospital shifts. Right after school, she’d tie on an apron, set the stove timer, and put me to work grating cheese or chopping onions at the counter so dinner would be ready before we opened our homework.

Whenever I suggested ordering pizza because we were short on time, Nora had the same answer ready: “Good food doesn’t take all night if you get the pan hot first.” Watching her turn a handful of pantry staples into something everyone raced to the table for taught me that cooking quickly isn’t about cutting corners on flavor. It’s just about smart prep and knowing which steps actually matter.

Why I Created My Fast Recipe

A couple of years ago, after a long Tuesday at my desk, I tried making a supposedly “20-minute” pasta dinner I found online. Nearly an hour later, my sink was stacked with three dirty pots, the onions were still crunchy, and the sauce was thin because the instructions completely ignored real prep time. Standing there at 8:30 at night scrubbing pans, I remember thinking how badly home cooks needed recipes with honest clock times.

I started timing my own weeknight meals from the minute the cutting board hit the counter, writing down every shortcut that saved a dish or shaved ten minutes off cleanup. After sharing those recipes with friends and coworkers who were tired of weeknight takeout, I launched My Fast Recipe in early 2025 to put all of my fastest, most dependable favorites in one place.

Real Timing and Kitchen Testing

Every recipe you see here is tested in my own kitchen with a timer running, so when a recipe card says forty minutes, you aren’t surprised halfway through.

While working on my Spinach Artichoke Mac and Cheese, my earliest batch turned watery as soon as it came out from under the broiler. Squeezing every drop of liquid out of the thawed spinach, whisking evaporated milk into a quick two-minute butter and flour roux, and pulling the Casarecce pasta just shy of al dente gave me a thick, velvety sauce with melted mozzarella and Monterey Jack in forty minutes flat. The same rule applies to baking. For my Espresso Fudge Cookies, testing showed that using room-temperature butter with two tablespoons of finely ground espresso beans and pulling the trays at eleven minutes, while the centers still look soft, gives you a rich, fudgy cookie in under half an hour from start to finish.

Weeknight Staples at My Table

On our busiest Tuesdays when nobody wants to wait for dinner, my 10 Minute Air Fryer Chicken Sausage and Veggies or Korean BBQ Chicken Sandwich with Cabbage Slaw saves the evening every time. Cold nights in Denver almost always call for a big pot of One-Pot Philly Cheesesteak Soup with Bacon and Cheesy Toast or Butternut Squash Lasagna Soup with Kale & Mozzarella. And when the weekend rolls around, there is usually a batch of Apple Butter Snickerdoodle Cookies cooling on the counter, or a Bourbon Chocolate Cake with Blackberry Buttercream waiting for friends to come over.

Whether you’re looking for fast weeknight dinners, cozy one-pot soups, homemade desserts, or browsing the full Recipe Index, I hope you find plenty of meals that give you your evening back.
