  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 sticks (1/2 pound) unsalted butter, softened, plus additional butter for greasing pan
  • 1 cup packed light brown sugar
  • 1 cup sugar
  • 4 large eggs
  • 2 (8-ounce) packages cream cheese, at room temperature
  • 2 sticks (1/2 pound) unsalted butter, at room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 1 1/2 cups confectioners' sugar, sifted
  • 1 1/2 pints raspberries (about 3 cups total)
  • 1/2 pint blueberries (about 1 cup total)

Instructions

  1. Preheat oven to 350°F. Butter and flour a 13×9-inch baking pan.
  2. In a bowl, whisk boiling water, cocoa powder, and instant coffee until smooth. Stir in milk and vanilla.
  3. In another bowl, sift flour, baking soda, and salt together.
  4. In a stand mixer, cream butter and sugars until fluffy. Add eggs one at a time, then mix in dry ingredients alternately with the cocoa mixture.
  5. Pour batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean. Cool completely.
  6. Beat cream cheese and butter until smooth; gradually add confectioners' sugar and chill.
  7. Frost cooled cake with cream cheese frosting, then decorate with berries to create the American flag design.
