  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup unsalted butter (melted)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • boiling water (for the water bath)

Instructions

  1. Preheat your oven to 350°F (180°C). Prepare a 9-inch springform pan by wrapping it in tin foil and greasing it lightly.
  2. For the crust, mix graham crumbs, brown sugar, cinnamon, and melted butter until combined. Press into the bottom of the springform pan.
  3. For the apple filling, peel and slice apples, tossing them with brown sugar and cinnamon.
  4. To make the cheesecake filling, beat cream cheese until smooth, then add sugars, cornstarch, vanilla extract, sour cream, and eggs one at a time until fully incorporated.
  5. Layer apple filling over the crust followed by cheesecake batter. Sprinkle oat topping over everything.
  6. Bake in a water bath for about 60 minutes or until set. Allow to cool gradually before refrigerating.
