  • 1/2 cup softened butter
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon baking soda
  • 1 1/4 cups rolled oats
  • 3/4 cup flour
  • 1 cup apricot preserves

Instructions

  1. Preheat your oven to 350°F (175°C) and spray an 8×8 or 9×9 baking dish with non-stick cooking spray.
  2. In a mixing bowl, combine softened butter, brown sugar, baking soda, rolled oats, and flour until crumbly.
  3. Press 2 cups of the mixture into the bottom of the prepared baking dish.
  4. Spread the apricot preserves evenly over the crust, leaving a 1/4-inch border.
  5. Sprinkle the remaining oat mixture over the apricot filling.
  6. Bake for 30-35 minutes until golden brown on top.
  7. Allow to cool completely before cutting into squares.
