  • 6 slices thick-cut bacon, chopped
  • 1/2 large onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 4 cups cooked and cooled long-grain rice (preferably day-old)
  • 3 large eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped

Instructions

  1. Cook the bacon in a cold skillet over medium heat until crispy. Remove and set aside, reserving the fat.
  2. Sauté the diced onion in the bacon fat for 3-5 minutes until translucent.
  3. Add minced garlic, peas, and carrots; cook for about 2-3 minutes until tender.
  4. Stir in the chilled rice; cook for another 2-4 minutes while pushing the mixture to one side.
  5. Scramble the eggs on the empty side of the pan until fully cooked, then mix back into the rice.
  6. Add soy sauce, oyster sauce, sesame oil, and cooked bacon; stir thoroughly to combine.
  7. Season with salt and pepper as desired. Garnish with green onions before serving hot.
