  • 1 wheel of brie cheese (812 oz)
  • 1 sheet frozen puff pastry, thawed
  • 12 tablespoons honey
  • 12 tablespoons fig preserves
  • 1 tablespoon fresh thyme leaves
  • Black pepper, to taste
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a floured surface; place the brie wheel in the center.
  3. Score the top of the brie with a knife in a crosshatch pattern.
  4. Spread fig preserves on top of the brie and drizzle with honey. Sprinkle fresh thyme and black pepper; optionally add chopped nuts.
  5. Fold the pastry over the brie and seal all edges tightly.
  6. Brush the pastry with beaten egg and sprinkle with coarse sugar if desired.
