  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard. Grease and line a 9 x 5 inch loaf tin with baking paper.
  2. In a large bowl, mash the overripe bananas thoroughly. Add the canola oil, milk, caster sugar, brown sugar, eggs, and vanilla extract; mix until combined.
  3. Sift in the plain flour, baking powder, and salt. Stir gently until just combined; some lumps are okay.
  4. Pour the batter into the prepared tin and bake for 45-55 minutes or until golden brown and a skewer inserted in the center comes out clean. Let cool in the tin for 10 minutes before transferring to a wire rack.
