  • 1 lb ground beef
  • 1 small onion (diced)
  • 4 cloves garlic (minced)
  • 3 cups low-sodium beef broth
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp butter
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat and sauté the diced onion until softened.
  2. Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add uncooked rice, beef broth, salt, pepper, and Italian seasoning; stir to combine.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender.
  6. In a small saucepan on low heat, melt the remaining butter and stir in milk, cheddar cheese, and Parmesan until smooth.
  7. Pour the cheese sauce into the skillet with the beef and rice mixture; stir well to combine.
  8. Cook uncovered for a few more minutes to meld flavors; garnish with chopped parsley if desired.
