  • ½ teaspoon sea salt
  • ½ cup unsalted butter (room temperature)
  • ½ cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 2½ teaspoons pure coconut extract
  • ¼ teaspoon almond extract
  • 1 cup whole milk
  • 3 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round baking pans by greasing and flouring them.
  2. In one bowl, mix together flour, baking powder, baking soda, and sea salt. In another large bowl, beat butter and oil until creamy; gradually add sugar.
  3. Mix in egg whites and extracts. Alternately add dry ingredients and sour cream with milk until just combined.
  4. Divide batter evenly into prepared pans and bake for about 25 minutes until a toothpick comes out clean.
  5. For the frosting, whip cold heavy cream and room-temperature cream cheese together with powdered sugar and extracts until fluffy.
  6. Once cooled, layer the cakes with frosting and sprinkle grated coconut on top.
