  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 3 tablespoons olive oil
  • 34 garlic cloves (minced)
  • 1 tablespoon achiote powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 2 teaspoons sea salt
  • 3 pounds chicken thighs or breasts

Instructions

  1. In a mixing bowl, combine orange juice, lime juice, olive oil, minced garlic, achiote powder, cumin, coriander, oregano, sea salt.
  2. Place chicken in a zip-top bag and pour marinade over it. Seal and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat grill to medium-high or oven to 400°F.
  4. Remove chicken from marinade and place on grill/baking sheet. Cook for about 30–40 minutes or until internal temperature reaches 165°F.
  5. Let rest for a few minutes before slicing and serve with lime wedges and cilantro.
