Ingredients
- 1/2 cup orange juice
- 1/4 cup lime juice
- 3 tablespoons olive oil
- 3–4 garlic cloves (minced)
- 1 tablespoon achiote powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- 2 teaspoons sea salt
- 3 pounds chicken thighs or breasts
Instructions
- In a mixing bowl, combine orange juice, lime juice, olive oil, minced garlic, achiote powder, cumin, coriander, oregano, sea salt.
- Place chicken in a zip-top bag and pour marinade over it. Seal and refrigerate for at least 30 minutes (up to 4 hours).
- Preheat grill to medium-high or oven to 400°F.
- Remove chicken from marinade and place on grill/baking sheet. Cook for about 30–40 minutes or until internal temperature reaches 165°F.
- Let rest for a few minutes before slicing and serve with lime wedges and cilantro.
