  • 1 tablespoon cornstarch
  • 1 teaspoon salt

  • 1 bell pepper (red or green), sliced
  • 8 ounces mushrooms (shiitake or button), sliced
  • 3 cloves garlic, minced
  • 2 green onions, chopped for garnish
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon honey
  • ½ teaspoon rice vinegar
  • 2 tablespoons vegetable oil, divided

Instructions

  1. Slice the chicken breasts and toss with cornstarch, salt, and black pepper.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat and stir-fry the chicken until browned (about 4-5 minutes). Remove and set aside.
  3. In the same skillet, add remaining oil and stir-fry onions and bell peppers for 2-3 minutes. Add mushrooms and garlic; cook until tender.
  4. Whisk together soy sauce, oyster sauce, honey, rice vinegar, and black pepper in a bowl.
  5. Return chicken to the skillet with vegetables and pour in the sauce. Toss until everything is coated and heated through (about 1-2 minutes).
