  • 1/2 tsp. Kosher Salt (or 1/4 tsp. Sea Salt)
  • 1/4 tsp. Onion Powder
  • 1/4 tsp. Garlic Powder
  • 1/4 tsp. Dried Thyme
  • 1/4 tsp. Cayenne Pepper
  • 1/4 tsp. Ground Cumin
  • 1 tbsp. Olive Oil (or Avocado Oil)
  • 4 Fajita-Sized Tortillas, warmed
  • 2 cups Shredded Coleslaw Mix
  • 1/2 cup crumbled Feta Cheese
  • 1 cup chopped Cherry Tomatoes
  • 1/4 cup good Mayonnaise
  • 1 tbsp. Hot Sauce
  • 1 tsp. fresh Lime Juice

Instructions

  1. Combine all blackened seasoning ingredients in a small bowl. Sprinkle this mixture over the flesh side of your salmon fillet. Drizzle with olive oil and let it rest at room temperature for about ten minutes.
  2. Heat your non-stick pan over medium heat. Add olive oil and allow it to heat up. Place your seasoned salmon flesh-side down in the pan. Cook for about three minutes before gently flipping it using a fish spatula. Cook for another 2–3 minutes or until done to your liking.
  3. Once cooked, transfer the salmon to a plate or shallow bowl. Allow it to rest for 4–5 minutes before flaking into bite-sized pieces.
  4. In a small bowl, mix together mayonnaise, hot sauce, and lime juice until well blended. Taste and adjust with salt if necessary.
  5. Warm your tortillas and start loading them with flaked salmon. Top each taco with shredded coleslaw mix, crumbled feta cheese, and chopped cherry tomatoes. Finish by drizzling spicy mayo on top before serving.
