  • 250 g digestive or graham crackers (for the crust)
  • 2 tbsp granulated sugar (for the crust)
  • 75 g butter (for the crust)
  • 300 g fresh blueberries (for the topping)
  • 1 tbsp granulated sugar (for the topping)
  • 1 tbsp all-purpose flour (for the topping)
  • 2 tsp lemon juice (for the topping)
  • 110 g all-purpose flour (for the filling)
  • 80 g dark brown sugar (for the filling)
  • 70 g butter (for the filling)
  • 800 g full-fat cream cheese (for the filling)
  • 260 g granulated sugar (for the filling)
  • 200 g sour cream (for the filling)
  • 1 1/2 tbsp cornstarch (for the filling)
  • 2 1/2 tsp vanilla extract (for the filling)
  • 4 large eggs (for the filling)

Instructions

  1. Preheat oven to 175°C (350°F). Crush crackers and mix with sugar and melted butter; press into a springform pan.
  2. In a bowl, combine blueberries, sugar, flour, and lemon juice; set aside.
  3. Beat cream cheese and sugar until smooth. Add sour cream, cornstarch, vanilla, brown sugar, and eggs; mix until just combined.
  4. Layer half of the cheesecake filling over the crust; top with half of the blueberries. Repeat layering.
  5. Bake for about 85 minutes until set but slightly jiggly in the center. Cool at room temperature before refrigerating for at least 4 hours.
