  • 1 3/4 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup canola oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 3 tablespoons bourbon
  • 1 cup hot coffee
  • 4 egg whites
  • 1 1/4 cups sugar (for buttercream)
  • 3/4 pound unsalted butter (softened and cut into pieces)
  • 1 1/4 cups pureed blackberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, combine the buttermilk, oil, eggs, extracts, and bourbon. Gradually add hot coffee while mixing.
  4. Combine wet and dry ingredients until just mixed; pour into prepared pans.
  5. Bake for 30–40 minutes until a toothpick comes out clean. Cool in pans before transferring to racks.
  6. For the buttercream, whisk egg whites and sugar over low heat until dissolved; beat until stiff peaks form. Gradually add butter and fold in pureed blackberries.
  7. Frost cooled cake layers with blackberry buttercream.
