  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together cocoa powder, flour, baking powder, and salt. In another bowl, beat melted butter, eggs, vanilla extract, and sugar until smooth. Combine both mixtures until fully blended.
  3. Drop spoonfuls of brownie batter onto prepared baking sheets about two inches apart.
  4. Bake for 15–20 minutes; edges should be set while centers remain soft. Cool on wire racks.
  5. For the filling, cream together softened butter with both sugars until fluffy. Mix in vanilla then gradually add flour and salt; stir in chocolate chips.
  6. Once brownies are cool, spread cookie dough filling on one brownie cookie and top it with another to create a sandwich.
