Ingredients

Scale
  • 1 tablespoon butter
  • 1 medium onion (diced)
  • 2 medium carrots (peeled and diced)
  • 2 ribs celery (diced)
  • 2 cloves garlic (minced)
  • 6 cups chicken broth (low-sodium)
  • 23 chicken breasts (approx. 1 ½ pounds boneless, skinless)
  • ¾ cup cayenne pepper sauce (Frank’s Red Hot)
  • 1 packet ranch seasoning
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper (to taste)
  • 8 ounces cream cheese (brick style, softened)
  • 1 ½ cups shredded cheddar cheese (sharp, shredded off the block)
  • Blue cheese crumbles (optional)
  • Green onions or chives (optional)
  • Crushed tortilla chips (or Doritos) (optional)

Instructions

  1. Heat butter in a large pot over medium heat. Add diced onion, carrots, and celery; sauté until soft (about 5 minutes). Stir in garlic and cook until fragrant (30 seconds).
  2. Pour in chicken broth, scraping up browned bits from the pot.
  3. Nestle chicken breasts into the broth; bring to a boil. Cover and cook for 20-25 minutes until fully cooked (165°F/74°C). Remove and shred chicken.
  4. Stir shredded chicken back into the pot along with cayenne pepper sauce, ranch seasoning, Worcestershire sauce, cream cheese (cubed), and cheddar cheese. Simmer until heated through and creamy.
  5. Adjust seasonings as desired and serve hot with optional toppings.
