Ingredients

  • 12 large eggs
  • 4 tablespoons mayonnaise
  • 2 tablespoons creole mustard
  • 1 stalk celery, finely chopped
  • 1 green onion, finely chopped
  • ¼ teaspoon Cajun seasoning
  • 1 teaspoon Crystal hot sauce

Instructions

  1. Boil the eggs by placing them in a pot covered with water. Bring to a boil over medium heat, then cover and remove from heat. Let sit for 11 minutes.
  2. Transfer eggs to an ice bath to cool. Once cooled, peel and slice them in half lengthwise.
  3. Scoop out yolks into a bowl and mix with mayonnaise, creole mustard, celery, green onion, Cajun seasoning, and hot sauce until smooth.
  4. Spoon or pipe the mixture back into egg whites and garnish as desired.
