  • 12 oz pasta (tagliatelle, fettuccine, or penne)
  • 2 tbsp olive oil
  • 2 large leeks (thinly sliced)
  • 2 cups mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 2 tbsp butter
  • ½ cup heavy cream
  • 1 cup Gruyere cheese (shredded)
  • ½ cup vegetable or chicken broth
  • Salt & black pepper (to taste)
  • Fresh thyme (1 tsp, chopped)
  • 1 tbsp lemon juice

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, drain, and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté leeks with a pinch of salt until soft and golden (10–12 minutes).
  3. Add mushrooms and butter; cook until golden and tender (5–7 minutes). Stir in garlic and thyme for an additional minute.
  4. Pour in broth; simmer briefly while scraping browned bits from the skillet. Add heavy cream and reduce heat.
  5. Stir in Gruyere cheese until melted; adjust consistency with reserved pasta water if needed.
  6. Toss cooked pasta in the creamy sauce until fully coated.
