Ingredients
- 2 tbsp olive oil
- 1 tbsp salted butter
- 4 cups diced yellow onions
- 1/4 cup water
- 2 tbsp fresh thyme (chopped)
- 2 1/2 cups all-purpose flour
- 1 1/4 cup lukewarm water
- 1/4 cup parmesan cheese (finely shredded)
- 1 tbsp granulated sugar
- 2 tsp instant yeast
- 3/4 tsp salt
- 3 whole garlic cloves (crushed)
Instructions
- In a large skillet, melt butter and olive oil over medium heat. Add onions and water; cover until softened (about 5 minutes). Remove lid, reduce heat to medium-low, and stir frequently for about 1 hour until deeply caramelized. Mix in fresh thyme.
- In a mixing bowl, combine flour, lukewarm water, parmesan cheese, olive oil, sugar, yeast, and salt. Stir until combined.
- Lightly oil your hands and a large bowl; place the dough inside and cover with plastic wrap. Let rise in a warm area until doubled in size (about 1 hour).
- Prepare garlic oil by heating olive oil in a skillet with crushed garlic for about 5 minutes; set aside to cool.
- Preheat oven to 425°F (220°C) and pour half of the cooled garlic oil into an oiled baking pan.
- Stretch and shape the risen dough before placing it seam-side down in the baking pan. Cover again with plastic wrap and let rise for another hour.
- After the second rise, dimple the dough deeply with your fingers and pour remaining garlic oil on top.
- Bake for about 12–18 minutes or until golden brown and internal temperature reaches at least 190°F (88°C).
- Cool on a wire rack while spooning caramelized onions evenly over the top.
