Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1½ cups long-grain white rice
  • 1 cup coconut milk
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 teaspoons fresh thyme
  • 1 Scotch bonnet pepper (or habanero)
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt, pepper, paprika, allspice, garlic powder, and onion powder.
  2. Heat oil in a heavy-bottomed pot over medium heat; brown chicken on both sides and set aside.
  3. Sauté onion, garlic, bell peppers, and tomato until softened.
  4. Add thyme, allspice, smoked paprika, and rice; mix well.
  5. Pour in chicken broth and coconut milk; return browned chicken to pot with Scotch bonnet.
  6. Bring to a boil, then reduce heat and simmer covered for about 30 minutes until rice is cooked through.
  7. Stir in frozen peas (if using) during last five minutes; fluff rice before serving.
