Ingredients
- 6 bone-in, skin-on chicken thighs
- 1½ cups long-grain white rice
- 1 cup coconut milk
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 teaspoons fresh thyme
- 1 Scotch bonnet pepper (or habanero)
- Salt and pepper to taste
Instructions
- Season chicken with salt, pepper, paprika, allspice, garlic powder, and onion powder.
- Heat oil in a heavy-bottomed pot over medium heat; brown chicken on both sides and set aside.
- Sauté onion, garlic, bell peppers, and tomato until softened.
- Add thyme, allspice, smoked paprika, and rice; mix well.
- Pour in chicken broth and coconut milk; return browned chicken to pot with Scotch bonnet.
- Bring to a boil, then reduce heat and simmer covered for about 30 minutes until rice is cooked through.
- Stir in frozen peas (if using) during last five minutes; fluff rice before serving.
