  • 1/3 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tbsp unsalted butter
  • 2 tbsp granulated sugar
  • 1/2 cup chopped pecans
  • 1/3 cup cream cheese (softened)
  • 3 tbsp unsalted butter
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350ºF and prepare an 8 or 9-inch springform pan with parchment paper and cooking spray.
  2. For the carrot cake layer, combine flour, baking powder, baking soda, salt, and cinnamon in one bowl. In another bowl, mix vegetable oil, sugars, eggs, and vanilla until smooth; fold in grated carrots and dry ingredients.
  3. For the cheesecake layer, beat cream cheese until smooth; add sugars, sour cream, eggs, vanilla extract, and salt until creamy.
  4. Layer half of the carrot cake batter followed by half of the cheesecake batter in the springform pan. Repeat layers.
  5. Bake for 45-50 minutes or until set in the center; cool completely before adding toppings.
  6. Prepare topping by toasting pecans in butter and sugar mixture; spread over cooled cheesecake.
