  • 1 large onion, diced
  • 6 garlic cloves
  • 1 ½ Tbsp Organic Better than Bouillon Roasted Chicken Base
  • 4 cups water
  • 4 large apples, diced
  • 4 large potatoes, diced
  • 2 cups shredded gouda cheese
  • 4 cups shredded cheddar cheese
  • 1 lb bacon
  • ¼ cup maple syrup

Instructions

  1. Preheat oven to 375°F and line a sheet pan with parchment paper.
  2. Arrange bacon on the sheet pan, drizzle with maple syrup, sprinkle with smoked paprika, and bake for about 30 minutes until crispy.
  3. In a large pot, combine water and chicken bouillon base. Add onions, garlic, potatoes, and apples. Cook over medium heat for 20-30 minutes until tender.
  4. Use an immersion blender to puree the mixture until smooth. Stir in gouda, cheddar, maple syrup, salt, pepper, smoked paprika, and cayenne pepper.
  5. Chop candied bacon and stir into soup just before serving.
