Description

Ingredients

  • 1 ½ lb yellow flesh potatoes
  • 2 tbsp butter
  • 2 tbsp milk
  • 3 eggs
  • ¼ cup shredded parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 ¼ cups shredded cheddar cheese (divided)
  • 3 tbsp chopped fresh chives
  • 1 tsp kosher salt
  • ¼ tsp pepper

Instructions

  1. Peel and dice the yellow flesh potatoes. Boil in salted water until tender. Drain and mash with butter and milk.
  2. Cool the mashed potatoes completely. Combine cooled mash with eggs, cheeses, chives, salt, and pepper in a bowl.
  3. Preheat the oven to 400°F (200°C). Grease a muffin tin and sprinkle grated parmesan into each cup.
  4. Fill each muffin cup with potato mixture, top with remaining cheddar cheese, and bake for 30-35 minutes until golden brown.
  5. Allow to cool slightly before removing from the tin. Serve warm with sour cream.
