  • 1 1/2 lbs boneless skinless chicken breasts, diced
  • 2 Tbsp olive oil
  • 1 small yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 Tbsp fresh ginger, minced
  • 1 cup low-sodium chicken broth
  • 3/4 cup diced tomatoes (canned or fresh)
  • 1/3 cup heavy cream
  • 1 1/2 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp fennel seeds, crushed
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground black pepper
  • 1/4 tsp ground mustard
  • 1/4 tsp ground cloves
  • Salt
  • Cayenne pepper (to taste)
  • 1 tsp cornstarch mixed with 2 tsp water (optional)
  • 2 Tbsp chopped cilantro

Instructions

  1. In a bowl, whisk together the spices and set aside.
  2. Heat olive oil in a non-stick skillet over medium-high heat. Add onions and sauté until golden brown (4-6 minutes).
  3. Stir in garlic and ginger; cook for another 30 seconds.
  4. Add the spice mix and sauté briefly before pouring in chicken broth and tomatoes. Bring to a boil then simmer for 5 minutes.
  5. Blend the sauce until smooth and return it to the skillet.
  6. Season with salt and cayenne pepper, then add the chicken. Simmer until cooked through (8-12 minutes).
  7. Optional: Stir in cornstarch mixed with water to thicken.
  8. Finish by adding cream and serve garnished with cilantro.
