- 10–12 bone-in skinless chicken thighs
- 3 quarts cold water
- 1 tablespoon olive oil
- 2 yellow onions, diced
- 8 large carrots, chopped
- 6 ribs celery, chopped
- 5 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon pepper
- Juice of one lemon
- 2 bay leaves
- Fresh parsley, chopped (for garnish)
Instructions
- In a large stockpot, combine the chicken thighs and cold water. Bring to a boil, cover, and simmer for 30-45 minutes.
- Meanwhile, heat olive oil in a Dutch oven over medium heat. Sauté onions for 4-5 minutes until translucent. Add carrots and celery; cook for another 10-15 minutes before stirring in garlic, salt, pepper, and bay leaves.
- Remove the chicken from the pot and strain the broth into the Dutch oven with vegetables.
- Shred the chicken once cooled and return it to the pot. Add lemon juice and bring to a boil before reducing heat to simmer for another 30 minutes.
- Adjust seasoning as needed and garnish with parsley before serving.
