- 8 ounces egg noodles or rice noodles
- 1 pound boneless, skinless chicken breasts, sliced
- 2 tablespoons vegetable oil
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 3 green onions, sliced
- 1/2 cup soy sauce (or tamari for gluten-free)
- 1/4 cup honey or maple syrup
- 2 tablespoons rice vinegar
- 2 teaspoons cornstarch mixed with water
Instructions
- Cook the noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add sliced chicken and cook until browned and cooked through (5–7 minutes).
- Add bell peppers, broccoli, and carrot to the skillet. Stir-fry for an additional 3–5 minutes until vegetables are tender but crisp.
- In a bowl, combine soy sauce, honey (or maple syrup), rice vinegar, garlic, ginger, and cornstarch mixture. Pour over the chicken and vegetables.
- Add the cooked noodles to the skillet and toss everything together until well combined. Heat through for another 2 minutes.
- Serve hot with optional garnishes like sliced green onions and sesame seeds.
