- 1 lb (450g) chicken breast or thighs, diced
- 4 cups cooked day-old rice
- 2 large eggs, beaten
- 1/2 cup frozen peas
- 1/2 cup frozen carrots, diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 3 green onions, chopped
- 1 tablespoon vegetable oil
- 1/4 cup bell pepper, diced
- 1 teaspoon fresh ginger, grated
Instructions
- Prepare all ingredients by dicing chicken and chopping vegetables.
- Heat vegetable oil in a wok over medium heat and scramble the eggs until cooked. Remove and set aside.
- In the same pan, cook the chicken until golden brown (about 5-7 minutes).
- Add garlic, ginger, and vegetables; stir-fry for about 3 minutes.
- Mix in the day-old rice, soy sauce, and sesame oil; break up clumps as you stir.
- Return scrambled eggs to the pan and combine everything until heated through. Garnish with green onions before serving.
