Description

Cilantro Lime Quinoa Salad is a vibrant and refreshing dish that brings together the wholesome goodness of protein-rich quinoa, zesty lime, and a medley of fresh vegetables. Perfect for a light lunch, hearty side at summer gatherings, or a healthy snack, this salad bursts with flavor while remaining simple to prepare.


Ingredients

  • 1 cup uncooked quinoa
  • 1 can (15 oz) white beans, rinsed and drained
  • ⅓ cup red onion, finely diced
  • ½ cucumber, chopped
  • ½ cup fresh cilantro
  • 1 scallion
  • 12 cloves garlic
  • ¼ cup plant-based yogurt or olive oil
  • Juice and zest of two limes
  • 1 tbsp maple syrup

Instructions

  1. Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water or broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed. Let cool.
  2. In a blender, combine cilantro, scallion, garlic, yogurt (or olive oil), lime juice and zest, and maple syrup. Blend until smooth.
  3. In a large bowl, mix cooled quinoa with white beans, red onion, and cucumber. Pour dressing over the mixture and toss gently.
  4. Serve immediately or refrigerate for enhanced flavor.
