- 1 cup uncooked quinoa
- 1 can (15 oz) white beans, rinsed and drained
- ⅓ cup red onion, finely diced
- ½ cucumber, chopped
- ½ cup fresh cilantro
- 1 scallion
- 1–2 cloves garlic
- ¼ cup plant-based yogurt or olive oil
- Juice and zest of two limes
- 1 tbsp maple syrup
Instructions
- Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water or broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed. Let cool.
- In a blender, combine cilantro, scallion, garlic, yogurt (or olive oil), lime juice and zest, and maple syrup. Blend until smooth.
- In a large bowl, mix cooled quinoa with white beans, red onion, and cucumber. Pour dressing over the mixture and toss gently.
- Serve immediately or refrigerate for enhanced flavor.
