Ingredients
- 1 ¼ pounds flank steak
- ⅓ cup olive oil
- 1 lime (zested and juiced)
- 1 tablespoon minced garlic
- ½ cup minced cilantro
- 2 cups cooked white rice
- 1 can black beans (drained and rinsed)
- 1 avocado
- Cilantro lime crema (see separate recipe)
Instructions
- In a mixing bowl, whisk together olive oil, lime zest and juice, minced garlic, cilantro, salt, and pepper to create the marinade.
- Place the flank steak in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 1 hour.
- Heat a cast iron pan over medium-high heat. Cook the marinated steak for 3–4 minutes on each side until it reaches an internal temperature of 145°F.
- Let the steak rest for 10 minutes before slicing into strips or cubes.
- Assemble bowls with cooked rice as a base, topped with black beans, corn, sliced avocado, and sliced steak. Drizzle with cilantro lime crema.
