Ingredients
- 5 strips bacon
- 3 1/2 lbs beef chuck
- 4 tablespoons unsalted butter
- 1 yellow onion
- 3 large carrots
- 5 garlic cloves
- 2 cups Burgundy wine (or bold red wine)
- 2 cups beef stock
- Fresh thyme and bay leaves
- 16 oz cremini mushrooms
Instructions
- Preheat the oven to 350°F (175°C).
- In a Dutch oven, render chopped bacon over medium-low heat until browned. Remove and set aside.
- Season beef cubes with salt and pepper; sear in the same pot until browned on all sides. Remove beef.
- Sauté onions and carrots in butter for about 3 minutes, add garlic, then stir in tomato paste and flour.
- Pour in wine, scraping the bottom for flavor; add beef stock and return bacon and beef along with thyme and bay leaves.
- Cover and bake for 2.5 hours.
- In a skillet, sauté mushrooms and pearl onions until golden; add to the pot and cook for an additional 45 minutes.
- Let rest for 30 minutes before serving.
