  • 2 1/4 to 2 1/2 lb organic chuck beef
  • 1 medium onion
  • 2 carrots
  • 2 celery stalks
  • 6 garlic cloves
  • 1 sheet puff pastry
  • Kosher salt, to taste
  • Black pepper, to taste
  • 1 1/2 tsp paprika
  • 5 tbsp all-purpose flour, separated
  • Olive oil, as needed
  • 1 large parsnip, peeled and thickly sliced
  • 2 tsp Italian herb blend
  • 2 small bay leaves
  • 1/2 tsp dried thyme
  • 1/4 tsp ground white pepper
  • 1 tbsp tomato paste
  • 1/2 cup red wine (for cooking)
  • 2 cups beef broth
  • 8 oz baby yellow potatoes, halved or quartered
  • 3/4 cup petite peas, thawed
  • 1 tbsp chopped fresh parsley
  • 1 tsp fresh thyme leaves
  • 1 egg yolk, beaten for brushing

Instructions

  1. In a large Dutch oven, heat olive oil over medium-high heat and brown seasoned beef chunks for about 5 minutes per side. Remove from pot.
  2. Sauté chopped onion, carrots, celery, parsnip, and garlic until softened (5-7 minutes).
  3. Sprinkle flour over veggies, stir in tomato paste, red wine, and beef broth; return beef to the pot and simmer for about 90 minutes.
  4. Fold in baby potatoes and peas; remove bay leaves.
  5. Transfer filling to a baking dish, roll out puff pastry over the top, trim edges, brush with egg yolk.
  6. Bake in a preheated oven at 400°F for 30-35 minutes until golden brown.
