  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 1/4 cups vegetable oil
  • 4 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking soda

  • 2 teaspoons cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 teaspoon nutmeg
  • 3 cups shredded carrots
  • 1 cup chopped pecans
  • 2 8 oz pkgs cream cheese softened
  • 1 stick unsalted butter softened to room temperature
  • 3 cups powdered sugar
  • 2 teaspoons vanilla

Instructions

  1. Preheat oven to 350°F. Grease and flour three 8-inch round baking pans.
  2. In a large bowl, mix granulated sugar, brown sugar, vegetable oil, and eggs until combined.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, salt, and nutmeg.
  4. Gradually mix dry ingredients into wet ingredients until just combined. Fold in shredded carrots and pecans.
  5. Divide batter among prepared pans and bake for about 25 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool completely before frosting with cream cheese frosting.
