  • 1 cup chopped pecans or almonds
  • 1 cup granulated sugar (200 grams)
  • 1 cup butter (226 grams)
  • 1/2 teaspoon salt
  • 1/4 cup water (60 ml)
  • 1 teaspoon vanilla
  • Toppings: chocolate chips, additional chopped pecans, flaked sea salt (optional)

Instructions

  1. Prepare your workspace by lining a baking sheet with parchment paper.
  2. In a heavy-bottomed saucepan, combine butter, sugar, salt, water, and vanilla. Stir gently until mixed.
  3. Place over medium heat and stir continuously until melted. Attach a candy thermometer and cook without stirring until reaching 300°F (hard crack stage).
  4. Quickly stir in the chopped nuts before pouring onto the lined baking sheet.
  5. Let cool completely at room temperature. Melt chocolate chips and spread over the cooled toffee.
  6. While the chocolate is warm, sprinkle additional nuts and optional sea salt on top. Once set, break into pieces.
