  • 4 cups corn kernels (fresh or frozen)
  • 2 tbsp butter
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Juice of 1 lime
  • 1/2 cup crumbled cotija cheese
  • 2 tbsp chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. If using frozen corn, thaw it in advance; if using fresh corn, cut it off the cob.
  2. Heat a large skillet over medium heat and melt butter.
  3. Add corn kernels to the skillet and cook for about 5–7 minutes until heated through and slightly charred.
  4. In a mixing bowl, combine mayonnaise, sour cream, chili powder, smoked paprika, lime juice, salt, and pepper; stir until smooth.
  5. Pour the creamy mixture over the cooked corn in the skillet and mix well until all kernels are coated.
  6. Transfer to a serving dish and top with crumbled cotija cheese and chopped cilantro before serving warm.
