  • 2 teaspoons unflavored gelatin
  • 1 1/4 cups heavy cream
  • 3/4 cup whole milk
  • 1/4 cup granulated sugar
  • 2 tablespoons instant coffee
  • Pinch of salt
  • 2 teaspoons pure vanilla extract
  • Chocolate caramel sauce (optional)
  • Semi-sweet chocolate chips (for decoration)

Instructions

  1. Prepare four ramekins by lightly spraying them with non-stick cooking spray.
  2. In a small bowl, combine cold water and gelatin; let sit for 10 minutes to bloom.
  3. In a medium pot, heat heavy cream, whole milk, sugar, and instant coffee over medium-low heat while whisking until dissolved.
  4. Remove from heat and whisk in bloomed gelatin until fully dissolved; add salt and vanilla extract.
  5. Pour the mixture into prepared ramekins and refrigerate for at least 4 hours or overnight.
  6. For garnish, melt chocolate chips, spread on parchment paper, freeze briefly, then scrape into curls.
  7. To serve, dip ramekins in hot water to loosen, invert onto plates, drizzle with caramel sauce, and top with chocolate curls.
