  • 300 grams pasta (your choice)
  • 200 grams halloumi (cubed)
  • 300 grams broccoli (small florets)
  • 1 fennel (thinly sliced)
  • 3 tablespoons pesto
  • 2 tablespoons olives (sliced)
  • 2 tablespoons roasted red peppers (strips)
  • 2 tablespoons toasted pine nuts
  • Fresh basil for garnish

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In the same pot, blanch broccoli in boiling water for 3–4 minutes until bright green; drain.
  3. In a frying pan, heat olive oil over medium heat and fry halloumi cubes until golden brown on both sides; remove from heat.
  4. In a large bowl, combine cooked pasta, broccoli, fennel, olives, red peppers, pine nuts, and spring onions; toss gently.
  5. Add pesto and stir until well combined. Garnish with fresh basil before serving warm or chilled.
