- 1/2 cup breadcrumbs (plain or seasoned)
- 2 large eggs
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 4 cups low-sodium beef broth
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
Instructions
- In a large bowl, mix the ground beef, breadcrumbs, eggs, onions, garlic, salt, and pepper until just combined.
- Shape the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
- Heat olive oil in a large pot over medium heat and brown the meatballs for about 5 minutes on all sides. Remove and set aside.
- In the same pot, sauté carrots and celery for 5 minutes before adding minced garlic.
- Pour in the beef broth and scrape any browned bits from the bottom of the pot. Bring to a gentle simmer.
- Return the meatballs to the pot and simmer for 30 minutes to meld flavors.
