  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 can black beans (drained and rinsed)
  • 1 can corn kernels (drained)
  • 2 cups beef broth
  • 1 cup heavy cream
  • 8 oz cream cheese (softened)
  • 1 ½ cups shredded cheddar cheese

Instructions

  1. In a large pot, heat oil over medium heat and brown the ground beef for about 5–7 minutes.
  2. Drain excess fat, add chopped onion, and sauté for 3–4 minutes until softened.
  3. Stir in minced garlic and cook for another 30 seconds.
  4. Mix in taco seasoning, followed by diced tomatoes, black beans, corn, and beef broth. Combine well.
  5. Bring to a boil then reduce heat and let it simmer for about 10–15 minutes.
  6. Stir in heavy cream and cubed cream cheese until melted.
  7. Add shredded cheddar cheese until fully incorporated.
