Ingredients
- 2 lb boneless skinless chicken breasts
- 1/4 cup all-purpose flour
- 2 tbsp coconut oil
- 1 cup coconut milk
- Juice of 2 limes
- 2/3 cup chicken broth
- 1 tbsp brown sugar
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix flour and chopped cilantro. Coat each chicken breast in the mixture.
- Heat coconut oil in an oven-safe skillet over medium heat. Sear the chicken for 3-4 minutes on each side until browned.
- In another bowl, combine coconut milk, chicken broth, brown sugar, and juice from one lime. Pour over seared chicken.
- Bake in the preheated oven for 10-15 minutes until chicken reaches an internal temperature of 165°F (74°C).
- Remove from oven, drizzle remaining lime juice over the top, and garnish with cilantro.
