  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 3/4 cup bacon, minced
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 cup bone broth or stock
  • 1 tablespoon tomato paste
  • 1/2 cup sour cream
  • 3 sprigs fresh thyme, divided
  • Salt + pepper to taste
  • 1 tablespoon Worcestershire sauce (optional)
  • 1/4 cup parsley leaves for garnish

Instructions

  1. Prepare the ingredients by cleaning and slicing the mushrooms, chopping the onion, and mincing the garlic.
  2. In a large skillet over medium heat, cook the bacon until crispy. Remove it with a slotted spoon, leaving the fat in the pan.
  3. Add butter to the skillet; sauté the onion until translucent then add garlic and mushrooms until golden.
  4. Sprinkle flour over the mixture to create a roux; stir well for about two minutes.
  5. Gradually add bone broth while stirring; simmer until slightly thickened.
  6. Temper sour cream by mixing it with some hot sauce before adding it to prevent curdling.
  7. Stir in the tempered sour cream and cooked bacon; season to taste and simmer gently until thickened.
