- 3 cans cannellini beans
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 yellow onion
- 2 medium carrots
- 2 celery sticks
- 4 cloves garlic
- Fresh rosemary
- Dried thyme
- Spinach or kale
- Parmesan cheese
Instructions
- Rinse and drain one can of beans. Blend with 1 cup broth until smooth; set aside.
- In a large pot, heat olive oil over medium heat. Sauté diced onion, carrots, and celery until tender (about 5 minutes). Add minced garlic; sauté for another minute.
- Stir in the pureed bean mixture and remaining whole beans. Add vegetable broth, rosemary, thyme, salt, black pepper, and crushed red pepper flakes. Simmer for 15 minutes.
- Add chopped spinach or kale; simmer for another 10 minutes. Stir in lemon juice and Parmesan cheese.
- Taste and adjust seasoning before serving hot.
