  • 3 cans cannellini beans
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 yellow onion
  • 2 medium carrots
  • 2 celery sticks
  • 4 cloves garlic
  • Fresh rosemary
  • Dried thyme
  • Spinach or kale
  • Parmesan cheese

Instructions

  1. Rinse and drain one can of beans. Blend with 1 cup broth until smooth; set aside.
  2. In a large pot, heat olive oil over medium heat. Sauté diced onion, carrots, and celery until tender (about 5 minutes). Add minced garlic; sauté for another minute.
  3. Stir in the pureed bean mixture and remaining whole beans. Add vegetable broth, rosemary, thyme, salt, black pepper, and crushed red pepper flakes. Simmer for 15 minutes.
  4. Add chopped spinach or kale; simmer for another 10 minutes. Stir in lemon juice and Parmesan cheese.
  5. Taste and adjust seasoning before serving hot.
