Ingredients
- 1 pound cauliflower florets
- 1 pound extra lean ground beef
- 1 1/2 tablespoons olive oil
- 1/4 cup tomato paste
- 2 tablespoons honey
- 2 tablespoons chili crunch
- 2 tablespoons soy sauce (or coconut aminos)
- 2 tablespoons black or rice vinegar
- 4 scallions (green and white parts separated)
Instructions
- In a small bowl, mix tomato paste, chili crunch, honey, soy sauce, vinegar, water, and white parts of scallions. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add cauliflower; cook for 4-5 minutes until browned. Transfer to a bowl and cover.
- In the same skillet, add remaining olive oil and ground beef; cook until browned.
- Pour the prepared sauce over the beef; stir until thickened (1-2 minutes). Add cauliflower back to the skillet; toss to combine.
- Garnish with green parts of scallions before serving.
