  • 80g powdered sweetener (partially sugar alternative)
  • 12 tbsp freeze-dried raspberries (powdered)
  • 2 large egg whites
  • 4050g granulated sugar or sugar substitute
  • 7080g dark chocolate (chopped)
  • ¼ cup almond milk or low-fat milk

Instructions

  1. Preheat oven to 300°F (150°C) and prepare baking sheets lined with parchment paper.
  2. In a mixing bowl, whip egg whites until foamy; gradually add granulated sugar and beat until stiff peaks form.
  3. Sift together almond flour, powdered sweetener, and raspberry powder in another bowl.
  4. Gently fold the dry mixture into the whipped egg whites until well combined.
  5. Pipe small circles onto prepared baking sheets and let them rest for 30 minutes.
  6. Bake for 15–20 minutes until set; allow to cool completely.
  7. Melt dark chocolate with almond milk over low heat until smooth for the ganache filling.
  8. Once cooled, pair macaron shells by size, pipe ganache on one shell, and sandwich with another.
