Ingredients

Scale
  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter
  • 24 ounces cream cheese
  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 3 large eggs
  • 8 ounces semisweet chocolate
  • 1 can cherry pie filling
  • Heavy cream for whipped topping

Instructions

  1. Preheat your oven to 350°F (175°C). Combine chocolate cookie crumbs with melted butter and press into the bottom of a springform pan. Bake for 10 minutes and let cool.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and cocoa powder, mixing well. Add eggs one at a time followed by melted chocolate and vanilla extract.
  3. Pour the filling over the cooled crust and bake for about 70 minutes until set but slightly jiggly in the center. Turn off the oven and let it sit inside for another hour.
  4. Allow to cool at room temperature before refrigerating for at least four hours or overnight.
  5. Whip heavy cream with powdered sugar and vanilla until soft peaks form. Spread cherry pie filling over the cheesecake before serving and top with whipped cream.
