  • 1 bunch asparagus (about 1 pound)
  • 1 can (15 oz) low-sodium chickpeas, drained and rinsed
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water or vegetable broth. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed. Let sit for 5 minutes before fluffing with a fork.
  2. While the quinoa cooks, trim asparagus ends and cut into bite-sized pieces. Blanch in boiling water for 3 minutes, then transfer to ice water to stop cooking.
  3. In a large bowl, mix cooked quinoa, drained chickpeas, and prepared asparagus.
  4. Whisk olive oil and lemon juice together in a small bowl; season with salt and pepper.
  5. Pour dressing over the salad mixture and toss gently to combine.
  6. Serve immediately or refrigerate for later.
