  • 34 pounds beef chuck roast
  • Dried guajillo peppers
  • Dried ancho peppers
  • 1 large onion
  • 5 garlic cloves
  • Cumin seeds
  • Oregano
  • 2 bay leaves
  • Low-sodium beef broth

Instructions

  1. Prepare the Peppers: Remove stems and seeds from guajillo and ancho peppers and soak them in hot water for 15 minutes.
  2. Blend Ingredients: In a blender, combine soaked peppers with onion, garlic, cumin seeds, oregano, bay leaves, and two cups of beef broth. Blend until smooth.
  3. Brown the Meat: In a large pot over medium-high heat, sear the beef chuck roast on all sides until browned (about five minutes per side).
