Description

  • 1 cup cooked quinoa
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions (2 parts water to 1 part quinoa) until water is absorbed.
  2. Rinse chickpeas under cold water in a colander; drain well.
  3. Dice cucumber and halve cherry tomatoes. Finely chop the red onion.
  4. In a large bowl, combine cooked quinoa, chickpeas, cucumber, cherry tomatoes, and red onion. Toss gently.
  5. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  6. Drizzle dressing over the salad and toss until evenly coated. Adjust seasoning if necessary before serving.
