Description

Indulge in the heartwarming flavors of this Savory French Onion Pot Roast, where tender chuck roast meets the sweetness of caramelized onions. Perfect for chilly evenings, this one-pot dish is easy to prepare and fills your home with an irresistible aroma. Ideal for family gatherings or cozy dinners, it’s a meal that will have everyone asking for seconds.

Ingredients

Scale
  • 3 lb chuck roast
  • 4 medium yellow onions, sliced
  • 2 cups low-sodium beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Generously season the chuck roast with salt and pepper. In a large skillet over medium-high heat, add 1 tbsp oil and sear the roast on all sides until browned (about 4-5 minutes per side).
  3. In the same skillet, reduce heat to medium-low, add sliced onions, and cook until caramelized (20-25 minutes), stirring occasionally.
  4. In a Dutch oven or roasting pan, place the seared roast at the bottom. Top with caramelized onions, pour in beef broth, and add thyme.
  5. Cover tightly and bake for about 3 hours or until fork-tender.
  6. Remove from the oven, let rest briefly before slicing, and serve drizzled with pan juices.
