  • 12 large eggs
  • 1/3 cup mayonnaise
  • 2 tsp Dijon mustard
  • 16 oz bacon
  • 34 jalapeño peppers
  • 1 small yellow onion (finely diced)
  • 2 cloves garlic (minced)
  • 1/3 cup maple syrup
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/2 tsp Cajun seasoning
  • 1/2 tsp celery salt
  • 1/2 tsp all-purpose seasoning
  • 1/2 tsp sugar
  • 1 tsp sweet relish
  • Paprika (to taste)

Instructions

  1. Boil the eggs in a pot of water for 10–12 minutes. Transfer to an ice bath to cool.
  2. Cook the bacon until crispy; drain on paper towels. Sauté diced onion, jalapeños, and garlic in the bacon fat, then add maple syrup, brown sugar, and Cajun seasoning.
  3. Once thickened, crumble the bacon into the mixture.
  4. Peel cooled eggs and separate yolks into a bowl; mix with mayo and seasonings until smooth.
  5. Fill egg whites with yolk mixture and top with jalapeño bacon jam.
